spicy pumpkin soup

spicy pumpkin soup

Remember way back here when I introduced you to my soup cookbook? And do you remember how I told you that I’ve got some of my very favourite recipes from this $0.50 garage sale purchase? And do you remember how I told you that my first selection was “Spicy Pumpkin Soup”. And that Oh.My.God. It was to die for? Well today, dear blog reader, is your lucky day. Because it is Spicy Pumpkin Soup day on .liveit.loveit.blogit.!

Oh yeah, and in addition to the spicy pumpkin soup, I’m also going to introduce you to Al’s Curried Butter Brie and Pear “Panini”. So basically, today is nothing but delicious!

First things first, as I mentioned in the earlier post, “pumpkin” is actually Australian for “butternut squash”.  Which is confusing.  Crazy people down under.

I admit, I have a disproportionate number of butternut squash recipes on the blog. But it is just so delicious!  And it’s been winter since I started the blog… and squash is so wintery.

The flavour in the soup comes from butternut squash, onion, garlic, ginger …

… tumeric, chicken broth, creamed coconut, half a lemon, and Srirachia sauce (I mentioned here how much I love Srirachia sauce, it’s delicious!)

The first step is frying up the “pumpkin”, onion, garlic, ginger, and turmeric in a saucepan. After a couple of minutes, its time to add the chicken broth!

Turn the heat way down and set it and forget it, covered, for about a half an hour. Then its time to blend. The recipe tells me to let it cool. I never ever do this. Does anyone know why I’m supposed to do this? Anyway – I usually ladle all my piping hot soup into the blender and puree it for 15-20 seconds. You want this soup to be smooooooth.

The last steps (of which I don’t have a picture) involve 1) squeezing in a bit of lemon, squeezing in a bit of sirachia (to taste) and mixing in some watered down creamed coconut, 2) bringing it almost back to a boil, and 3) serving. Yum!

Since January, I have been serving this soup with a curried butter brie and pear “panini”. (It’s probably more accurately a curried butter brie and pear grilled cheese, but that sounds somewhat more trashy). In any event, it is delicious, and simple. It’s pretty important to have super thin slices of pear and brie, otherwise these can be a little too rich!

Together, the “panini” and “pumpkin” soup are simply amazing.

peanut butter cookie doh!

peanut butter cookie doh!

So… last night I was just about to go to bed, I’d been planning for a 10pm bedtime, and it was 9:55. I was pretty much ready for bed when I had a craving for something sweet. And peanut buttery. And my mind flashed back to a couple of recipes I’ve seen in blogland over the past couple of months.  Recipes for raw or almost raw peanut butter cookie dough creations. Like this one. And this one. Yum! So, I said to the hubs “I better go to bed, or I’m going to make dessert”. And he said “WHAT? Why would you go to bed when you can make us dessert?” And so begins the saga of my Peanut Butter Cookie “Doh!”.

This recipe from An Edible Mosaic requires oats, and I had no oats on hand, so I opted to try this recipe for Peanut Butter Cookie Cups from Sing for Your Supper. Peanut butter cookie cups sound delicious right? And they look delicious too.

Peanut Butter Cookie Cups

Source: Sing For Your Supper.

Because 24 cookies is too many cookies for us, I decided to half the recipe. But. I half forgot to half my flour.* So, I basically I 3/4ed my flour.

*I often half things on the fly while I cook. The original recipe called for 1 3/4 cups, I remembered to half my 3/4 cup… but I forgot to half my 1 cup. Oops.

And then, when I had a crumbly mess on my hands, instead of doing what a sane person — or a person who had a half a clue about about baking would do* — I decided to add water. How much water, I don’t know. Lots. And then it was looking like a sticky mess, and starting to taste, well, not so good, so I added a couple of extra dollops of peanut butter for good measure.

*Just adding more of all the other ingredients.

What I forgot was that water + flour = bread, not cookies. It also sort of equals muffins, which aren’t cookies either. And who wants to eat peanut butter muffin dough? Not me. But, never one to give up, I figured that I had made it this far, and I would give it a go. Maybe it would work.

After creating a minor dough tornado trying to get the dough (which, by this point, was well within the realm of “doh!”) unstuck from my hand mixer, I was ready to go. I filled 2 cupcake cups 3/4 of the way with my dough And popped in the oven for 10 minutes. Then 12 minutes. Then 15 minutes. After 15 minutes, the tops were looking crispy, just like Amy promised they would.

Peanut Butter Cookie Doh!

No quite so nice as Sing For Your Supper's, but not terrible either.

Sure they couldn’t hold a candle to the Amy’s posted above… but they looked … ok … and maybe… just maybe … they would taste ok too.

After hearing the epic battle having just occured in the kitchen, the hubs approached my cookie cups with trepidation. “Have you tried it yet?” He asked before taking his first bite. And so, with a roll of my eyes and with reckless abandon I dove in. And it was really really bad. It really tasted like a raw peanut butter muffin. Which doesn’t sound good. At all. Because it isn’t. I actually ended up eating my ice cream, and a bit of the top part that was crispy (that part tasted like cooked peanut butter muffin, which still not a recommended taste sensation, but better than raw peanut butter muffin dough).

I still think that the recipe would have been delicious if I hadn’t added water and instead had added more ingredients.  Maybe, I’ll try it again one day and report back. But for now, I’m going to remind myself that baking is a science not an art. Well, that’s not true, baking is like paint by numbers. Which is kinda like art for not artistic people, provided we stay within the lines.

travel tuesday (dubrovnik)

travel tuesday (dubrovnik)

This photo was taken on July 9, 2008 in Dubrovnik, Croatia.  I actually didn’t really like Dubrovnik, the old happiness = reality/expectations got me there.  Despite my lackluster feelings about the city itself, I certainly don’t have any lackluster feelings about this this picture.  The combination of perfect light and pastel laundry… well… it makes me swoon! And it makes me think of summer days, which don’t seem to be coming any time soon in Toronto.

etsy print!

etsy print!

Several months ago I came across an awesome etsy seller, January Jones Prints, and their super cool print, “the roadtrip”. It got me thinking… wouldn’t a world map with all the places the hubs and I have been together be an awesome piece of art to adorn my walls? I promptly contacted Kirsten & Nic, the proprietors of January Jones Prints, and we worked out a design fee for my print. I chose a green map with grey hearts, to match the bedroom, and after a few backs and forths, I was totally happy with the print and it was on its way!

110320 worldmap 003

It arrived about a month ago, but I tucked it away until I had the chance to get a frame. For budgetary purposes, I picked up a 16×20″ (40x50cm) Ikea Ribba frame. They are super nice, super modern, and a bargain at $14.99

110320 worldmap 001

The print itself if 11×17″, but I decided (again for budgetary purposes) that I would frame it in the supplied 12×16″ mat.

110320 worldmap 002

And it (sort of) works! A new mat may be in my future, but not quite yet!

110320 worldmap 004

All that was left was hanging it! After a little bit of levelling…

110320 worldmap 006

it was ready to go!

110320 worldmap 007

I think it totally adds to the bedroom, and the colours work perfectly. The hubs loves it (especially when he finally looked close enough to realize just how neat it is!)

110320 worldmap 008

And yes… that is a teddy bear wearing an eye mask on the bed. What can I say? I like to snuggle the bear while I sleep (a little odd at almost 30, I grant you), and during the day, he’s a great place to store the eye mask…

But back to that print, it looks awesome! Even better? More super cool art from January Jones Prints adorns my walls too! But that, my friends, is a post for another day!

best of {take 8}

best of {take 8}

Take 8?!  I’ve been at this for 8 weeks already?  It feels like just yesterday that I decided I needed an outlet for all my personal blogging.  It’s been an amazing 8 weeks so far, and I’m only feeling more and more inspired.  Have I got lots of fun posts for you coming up!

This week there was all sorts of awesome stuff on the internet, and I was about to post 15 things in this post.  I decided that might be overwhelming, so I begrudgingly chopped it down to 5 (well… sort of 7, but what the heck).  Each of these 5 (…7…) posts is really, really good.

Starting with my most favorite (I realize that “most favorite” is totally redundant, but it’s my blog, and that’s how I feel!).

Kirsten’s post about Paris captured me utterly and completely.  It’s so beautifully written and makes me so very excited for this summer.  I’m in love with Paris, and have been since I first visited at 12 years old.  Since that first trip I’ve spent a total of about 8 weeks in Paris, each day growing better than the last.  It’s been about 6.5 years since I’ve been to Paris, and truly, I can’t wait to go back.

Just yesterday, one of my favorite wedding photogs posted her images from her recent trip to Paris.  They take my breath away, so a shout out to Tara McMullen as well, check it out if you want to swoon over some Paris imagery!

Next up this week is photograph.

Moment Junkie is a relatively new site (like this!) It’s the brainchild of Ryan Brenizer and Kyle Hepp.  And it’s awesome.  Go check it out.  You won’t be disappointed!

In decorate this week, I present a brooklyn limestone in progress.

This post is actually a “steal” of another post (see the original over at 221 vision) but without a brooklyn limestone, I never would have discovered 221 vision… oh the magic of the internet.  This is the best DIY project I have ever seen.  I’m totally impressed and I can’t wait until I get a new space to make myself a sweet and stunning hallway bench!

So, I haven’t yet made this meal that I’m posting in eat, but it looks delicious. And don’t worry – I’ll make it soon!

I didn’t even know there was a sirachia cookbook until I came across this post on Matt Bites.  I can’t wait to try this meal, and probably buy the cookbook.  I LOVE rooster sauce, almost as much as the hubs loves Franks!

Finally, a bonus post this week.

Thank you Jenny.  For telling it like it is.  I really am not in the mood for -10C (14F) with a “Real Feel” of -17C (1F) on March 27.  Just sayin.
