Are you looking for a bechamel based lasagna? Look no further. Seriously, this recipe from smitten kitchen, which she adapted, only a little, from Ina Garten, is delicious.

I’ve made this lasagna twice. The first time, I made it for a girlfriend and followed the recipe, almost exactly. The second time, I made it for my brother-in-law and sister-in-law and added asparagus. I wouldn’t do that again. So, while there are pictures of asparagus in this blog post – I highly recommend not using them… lasagna needs to cook too long for asparagus to the crisp-ness that makes them delicious.

The recipe calls for cremini or portobello mushrooms, I used both. (Please excuse the disco lighting in this image. I’m not sure what was going on there…)

Rather than using dried lasagna, I used fresh lasagna for this pasta and I seriously think it made the dish. It also made the dish way easier. And yes that is a super cute gingham apron (from etsy) I am wearing.

Each layer of lasagna called for one super big lasagna noodle, a coat of bechamel sauce, fried mushrooms, and parm. That’s it. (Well, except for the asparagus time….)

Yes, I am preparing the lasagna on the kitchen table, I’m a little short for the counters sometimes.

Doesn’t this look simply delicious? But remember, even though the asparagus looks good, go with just plain mushroom. I promise, you are in for a culinary delight!

time travel: banned

time travel: banned

If you know me well, you might know that I have only one phobia. And that is of time travel. Yes. I know. I can hear you stifling your giggle over there. But in all honesty, the whole idea of time travel just scares the be-jesus out of me. I can’t even really expand on why it scares me so much, because it causes me anxiety to think about it much.

When I was young my dad tried to make me watch the Back To The Future trilogy… I had to run away for some (ok, most) parts. Now I miss so many Back To The Future references in pop culture, it is ridiculous.

And it’s not only Back To The Future. One of my mom’s favourite books is The Time Travellers Wife, but she knows I can’t read it, which makes her sad. But truly I can’t. I don’t even know what the plot of the book is, but even thinking about what it could be makes me jittery.

Ok, you think I’m crazy. I’m used to it. And I understand that time travel is not real. Really, I do. But I still can’t deal with it. I’m getting all fluttery just typing this post. My leg is jiggling like cr-azy. And I’m sitting on a wobbly chair. Not a good combo.

So, it caused me great joy a couple of weeks ago when I learned from Sally (the most hilarious unbrave girl) that China has banned time travel. Yes, that is right. China has banned time travel.

I’m pretty sure there is some sort of explanation (but as you now know, I can’t do much reading on the topic). I’m sure this banning of time travel makes you think China is crazy. Fair enough. But it makes me love China even more. I’ve travelled a lot thought China; south-west China is up there with my favourite places in the whole world to travel. But now, oh happy day, I know I have a kindred spirit in China (at least where time-travel is concerned). And one day, if — god forbid — someone actually travels through time, I know where I’m going. And the dumplings are pretty good too.

homemade infused vodka

A few weekends ago we were going to a couple of our friends’ birthday party (yes, the plurals and possessives are right) and I just didn’t feel like drinking wine.

Ever since dry January I’ve really cut back on my drinking. I rarely drink on week nights, but even more surprisingly, I tend to restrain myself on weekends as well. My body just liked me so much during January, I decided to try to keep it up! However, there are special occasions, such as a couple of friends’ birthday party, that call for a few drinks.

Let me digress for a moment… In the last couple of years, I have learned that sugar + alcohol, even in moderate quantities, makes me feel b.a.d. the next day. I’ve also learned that if I keep up a steady 1 drink to 1 glass of water ratio, it helps metabolize the sugar (or it just washes it out through my system… whatever, it works!). So, if I really want to have more than a handful of glasses of wine, that’s my strict rule. In addition to helping me deal with the sugar (and pee even more than normal) it also totally cuts back on the number of glasses of wine I can have. Bonus!

Anyway, sometimes I just don’t feel like wine, but I like to keep my 1 drink to 1 glass of water ratio alive and well. This makes drinking any amount of beer very difficult (can you imagine how much liquid you are drinking if you drink one glass of water per beer?! Let me tell you, it’s a lot).

I also don’t really drink pop (or soda if you are one of my friendly American readers). And, as you can imagine, juice is out, too much (say it together) sugar! I even learned that my old friend tonic is laden with the fructose, how sad. So, no mixed drinks for me. Well, almost.

Enter the vodka soda. This drink is low-ish-cal, but more importantly for me it is no-sugar. And, it is inherently a one drink to one glass of water ratio. So, no need to keep track of glasses of water. But, it’s boring. As heck. And seems a little hard core coming from a girl who doesn’t drink much. So, several hours before we left for the party that night I tried to spice it up a little (quite literally) with my very first at home vodka infusion.

I muddled ginger, lime and basil together and then I smushed them (yes, that is the technical term) into the 13oz bottle of vodka we were taking to the party. And while I appreciate I upped the sugar content of my drink by infusing it, I’m still pretty sure it had less sugar than there is in wine. Woo hoo! And boy was it ever delicious.

It also looked super pretty and made me the coolest person at the party. Well, it made me the coolest person at the party to almost everyone. Certainly not to the girl that thought I had brought vodka that had gone off… she thought I was crazy.

Want some delicious infused vodka yourself? Make your own! Homemade infused vodka is easy, inexpensive and delicious. I give you my recipe, below, but feel free to experiment, and come back and let me know what kind of infusions you come up with. For instance, I’m not a vanilla vodka person, but if you are, I imagine a vanilla bean infusion would be mighty delicious!

travel tuesday (christchurch)

So… I thought I would stick with the same high contrast, bright blue sky colour scheme this week!  It’s just so pretty! This picture was taken on January 11, 2009 in Christchurch, New Zealand.  Remember way back at the beginning of this series when I posted a picture of Japanese moss right after the Japan earthquake?  I’ve been feeling sort of guilty that I haven’t shouted out to the people of New Zealand, who are still recovering from their own earthquake.  Christchurch was where we started our New Zealand adventure, of which we loved every minute.  It is a beautiful country, and if you get the opportunity, I urge you to go!

Last week I alluded to the fact that the “best of” series is becoming less of a weekly round up of the best blog posts on the web and more of a random occurrence when I see something (or some things) that I really really like. I’m not sure where you are from, but here it Toronto, it doesn’t feel much like spring. In fact it still feels like winter. Biting winds, sleet, snow, and days where it is 0C (32F).

A few weeks ago, however, we had a couple of nice days, so I decided to celebrate the spring and make something “springy” — like these falafel burgers from Oh She Glows, which she adapted from Savvy Eats. And unlike the other delicious falafel that I make, these burgers are baked, not fried! Healthy Score!

It all starts with some chickpeas. I’m a recent convert to cooking with dried legumes. And these chickpeas just solidified my conversion. They were delicious. I was seriously eating them by the handful. So, if you haven’t tried cooking from dried before, what are you waiting for? I know of at least three converts in my life so far! If you try it, stop by and leave me a note to let me know how it went!

These falafels are super easy because most of the ingredients get ground up in your blender (or food processor).

If you are a person who knows about my carrot allergy,* you may be looking at that blender in fear… Don’t worry, the proteins in the carrots change when I bake the falafel, and they are totally edible by yours truly.

*If you are not a person who knows about my carrot allergy, that is a story of another day. Long story short, I have oral allergy syndrome.

The recipe calls for all of the ingredients (including the flour) to be blended together in a food processor. I got all the way up to adding half the flour, when I realized I was probably pushing my blender too hard. So, instead I mixed in the remaining flour and the paprika in a cute blue mixing bowl.

For some reason I didn’t take a picture of preparing the falafels to be baked. Close your eyes and imagine raw falafel patties on a baking sheet covered in parchment paper. You got it! And here they are cooked.

I served them with fresh buns from the St. Lawrence Market, a little bit of grated mozzarella, slices of avocado, a big piece of mealy tomato (which I promptly removed; lesson learned… again… don’t add tomato unless it is the summer), a handful of arugula, and a generous splash of Frank’s.
